For extra flavor, mix a little pesto into the mayo before spreading it on the bread.

Ingredients:

  • 1 boneless, skinless chicken breast
  • Salt and pepper, to taste
  • 4 tbsp STAR Fine Foods Extra Virgin Olive Oil
  • 2 slices sandwich bread of your choice
  • 2 slices provolone cheese
  • 2–3 tbsp Cara Mia Sun Dried Tomatoes
  • 2 tbsp mayonnaise
  • 2 tbsp pesto sauce
  • Fresh romaine lettuce
  • Red onion (optional), julienned

Step by Step:

Step 1:

Season & Grill: Slice the chicken breast, season with salt and pepper, and grill in olive oil until fully cooked (5–6 minutes per side).

Step 2:

Prep Bread: Spread mayonnaise on bread slices, add provolone, and toast until cheese melts.

Step 3:

Assemble: Spread pesto on the toasted bread.

Step 4:

Layer: Add grilled chicken, Cara Mia sun dried tomatoes, romaine lettuce, and optional red onion.
